Onion, tomato and parmesan cheese cake

Ingredients:

– 2 chopped medium onions
– 3 medium tomatoes, skinless and seeded
– 6 tablespoons olive oil
– 3 eggs
– 1/2 cup of wheat flour
– 1/2 cup of cornstarch
– 1 tablespoon baking powder
– 1/2 cup of grated Parmesan cheese,
– 2 teaspoons of fennel seeds
– leaves of 4 chopped green-smelling branches
salt to taste

Method of preparation:




Preheat oven to medium (180 ° C). Beat the onion, tomato, olive oil (reserve 1 tablespoon) and the eggs for 2 minutes in the blender. Add the wheat flour, cornstarch, baking powder, Parmesan cheese, fennel seeds and salt. Hit for another minute. Add the green scent and hit the pulse function once. With the reserved oil, anoint 4 baking pans with a hole in the middle, with a capacity of 350 ml each. Sprinkle wheat flour, pour the dough and bake for 35 minutes, or until you stick a toothpick into the cakes it comes out clean. Remove from the oven, uncover still warm and serve.
